Watching you sing in concert is always a pleasure, but I appreciate watching the rehearsal as I find it just as meaningful. Thank you for sharing. Hope you’re feeling better. My daughter, Emma, is seeing the Sondheim Peters/Solanga show in London next week. I’m quite jealous but thrilled she’ll be there.❤️
My go-to soup is as easy as it is delicious: leek and potato a la Julia Child. In a pot add two cups of chopped leeks and two cups of peeled, chopped potatoes. Cover with water and add salt to taste. Cover partially and simmer about 20 min. or until veggies are cooked. Remove from heat. Puree with an immersion blender. Add a half cup of heavy cream (optional). Garnish with a tiny bit of fresh dill or other herb. Incredibly simple, but also amazingly delicious.
I make a couple changes to this. I use a rotisserie chicken to save time, plus it's tasty (from Costco). I also double the bok choy, water chestnuts, garlic, and ginger. I never add lime, cilantro, squash noodles, or hot sauce and it's still fantastic. I really like a product called "Better than Bouillon". It comes in a glass jar and is sort of a cube/liquid hybrid.
This one I found on my mission to live to 100. I'm a fan of the "blue zone" recipes, and this soup is insanely good. It's a hearty meal too (especially with great bread). I make it exactly how it's written.
I love chicken and vegetable soup. I use the chicken stock in a carton and add cooked and shredded chicken breast and any fresh vegetables that they have in the store that look good, such as onion, squash (zucchini and yellow), green beans, peas, cauliflower, broccoli, carrots, spinach. Just season with salt and pepper and some garlic.
Dan and I make a delicious chicken soup. The ingredients are (of course chicken), carrots, onion, celery, mushrooms, chicken broth, garlic, seasonings to taste, and the last things to add are chopped spinach and three cheese tortellini. I'm bad at writing out exact recipes 😅

Sometimes, simple is the best- I haven't tried summer squash in soup, but I will.
